Recipe Thursday: Dump Cake

Dump Cake
My Grandma Reed

This cake would be nice to take to a 4th of July picnic, or pretty much anytime. This was one of my favorites as a kid, only I called it "garbage cake" and it sort of stuck with our family.

Ingredients
1 lg can cherries
1 lg can crushed pineapple
1 box yellow cake mix
2 sticks butter (I actually cringed when I typed this. Challenge: Reduce this fat!)
1 cup pecans

Directions
1. Preheat oven to 350 degrees.
2. Blend cherries and pineapple in baking dish.
3. Sprinkle with cake mix.
4. Slice butter over mixture and add nuts.
5. Bake 1 hour at 350 degrees.

This was really simply, and maybe a little "poor people food", but it was so good and I loved this as a kid. I loved it AND I hated cherries when I was young, so it must be awesome. Probably all that butter.

Recipe Thursday: Banana Sour Cream Cake

Banana Sour Cream Cake

I'll post a picture after my birthday, as my plan is to make this as my birthday cake. Either that, or beg Jenny to make it since she asked what she could do for my birthday party. ;-)

Ingredients

1 pkg yellow cake mix
3 eggs
1 cup mashed ripe bananas (about 3)
1 cup sour cream
1/2 cup oil (I used applesauce)
8 oz pkg cream cheese; softened (I used reduced fat)
1/2 cup softened butter
16 oz pkg powdered sugar, about 4 cups
1 cup chopped walnut pieces

1. Preheat oven to 350 degrees
2. Beat cake mix, eggs, banana, sour cream and oil (applesauce) with mixer on low speed. Then beat on medium for 2 minutes. Pour into greased and floured 13x9 pan (I used two 9" round pans). Bake 35 minutes. Cool completely.
3. Beat cream cheese and butter w/mixer on medium until blended. Gradually add sugar, beating well after each addition.
3. Remove cake from pan. Cut in half crossways (this is if you use the big pan, why would you do this?) Spread top w/frosting, top with other cake, frost top and sides. Press nuts into sides.
4. Refridgerate leftovers if you somehow haven't pigged out and eaten the whole thing.

Seriously folks, this cake is freakin' incredible, and I know bananas, and this is banana-riffic!
I also think this would work really well as cupcakes with nuts on top. Yummy yum yummy!

Check Out This Little Gem

I was talking to Marc today and he asked if I had seen the website called Cake Wrecks. I hadn't, but I spent a little time this afternoon laughing my butt off at some of these cakes. Hilarious!!



Here's one that I ran across, not the funniest one, but it had Eagles on it, so it was a shoutout to my sweetie. I've also included the commentary.

You know your mom is cheap when...you have to share your own birthday cake. With a boy. (Yeah, I'm taking Ashley's side. Why? Because a) she likes Disney stuff, b) she's enduring what I'm assuming must be a sports logo on her birthday cake, and c) she's a girl. But mostly the Disney thing.)I like the unintentional irony of having Eeyore on the cake, though. A glum donkey for a glum-ass cake - it's quite appropriate. Still, I have a few questions:


1) Since the "Eagles" logo is blue, why is the icing green?


2) Can anyone see the colors green & purple together and NOT think of either Mardi Gras or the Joker?


3) How come Glen gets his name capitalized, but not Ashley?


4) Did anyone else first read this as "Happy ashley Birthday Glen"?


5) Doesn't Glen's side look bigger? Hey, I think it IS bigger. Mo-oooommm!!!
